Most shops treat exhaust and audio as two separate jobs. We plan them together, so the exhaust note you want does not bury the music you paid for.
If you are doing both, say so up front. It changes which speakers and how much power we recommend.
Usually, yes. Changing how the motor breathes changes what it needs for fuel. We will tell you what your combination calls for before the work starts.
Yes. Touring bikes are most of what we do, but Softails come through the shop as well.
